“Yellow Mellow” is 100% Extra Virgin Cooking Oil made from mature-harvest Picual olives. Mellow in flavor and made to take the heat, it's perfect for everyday cooking, from marinating to roasting and baking.

Origin: Jaén, Spain. Our olive oil comes from Jaén, Spain, the country’s top olive oil–producing region, where sun, soil, and tradition make it ideal for flavour-packed olives. We work with several farms dedicated to high-quality olive oil, all within a 20 km radius to keep the flavour consistent and the origin traceable.

Organic? This product is not certified organic. The farms for the Green Queen don't use any pesticides in making the olive oil. OlvLimits is working towards offering an organic version in the future.

Polyphenols - 404.3 mg/kg (HPLC)

Natural antioxidants that protect the oil and your body from oxidative stress. A typical extra virgin olive oil averages ~180 mg/kg; at 404.3 mg/kg, Yellow Mellow is polyphenol-rich while staying smooth in taste. Practically, that’s about ~5–6 mg polyphenols per 1 Tbsp (≈13.5 g).

Acidity - 0.13%

Lower acidity signals healthy fruit and careful milling (extra virgin must be <0.8%). 0.13% is excellent, clean fruit, clean flavor.

Peroxides - 3.7 meq/kg

A marker of early oxidation (extra virgin should be <20). At 3.7, your oil shows very low oxidation for bright, stable performance in the kitchen.

What is the difference with Green Queen?
Both are Picual from Jaén. Green Queen is harvested early for a green, peppery oil to use raw; Yellow Mellow is harvested in November–December when the olives are riper, giving a softer oil for everyday cooking.

Yes. The 2024/2025 season measured 404.3 mg/kg polyphenols, 0.13% acidity and a peroxide value of 3.7 meq/kg. OlvLimits also has independent tests done for pesticides and heavy metals; the reports can be downloaded on the product page.
