GSM is crafted from Grenache, Syrah, Mourvèdre, and Carignan, varieties traditionally blended in southern France for their complementary roles.

Born in the rugged hills of Saint-Chinian in southern France, this liberated red wine brings together four iconic Mediterranean grapes, Grenache, Syrah, Mourvèdre, and Carignan, each contributing depth, structure, and character. Aged for 12 months, it unfolds in layers, revealing a complexity rarely found in non-alcoholic reds.

The palate opens with bright red berries and blackberries, carried by a lively acidity and a firm, elegant tannic entrance. As it evolves, deeper tones emerge: mature dark fruit, warm spices, and earthy minerality, shaped by the region’s limestone soils and sun-drenched slopes. The finish is dry, structured, and beautifully grounded, with soft, rounded tannins that linger just long enough.

GSM comes from Saint-Chinian, a landscape defined by schist slopes, limestone plateaus, and ancient sandstone ridges. Mediterranean heat meets cool winds from the Massif Central, creating a climate that slows ripening and builds concentration in the grapes. The combination of elevation, exposure, and fragmented soils produces fruit with both freshness and depth. Many of the vineyards in Saint-Chinian are old, with parcels exceeding fifty years and some Carignan vines more than a century old. These deep-rooted vines offer naturally low yields and a clear sense of site. Garrigue vegetatio surrounds the vineyards and subtly influences the aromatic profile of the grapes.

The Making of GSM

GSM is made by fermenting hand-harvested grapes in raw concrete tanks, a method that supports clarity and gentle extraction. Grapes are destemmed and fermented with light pump-overs, allowing colour and structure to develop without excessive intensity. Full malolactic fermentation follows, contributing to roundness and textural integration. After fermentation, the wine is aged for twelve months on fine lees. This period allows the components of the blend to settle into balance and adds depth without overshadowing the fruit. Once it has matured, the alcohol is removed through a low-temperature, aroma-preserving method, maintaining structure, minerality, and the core expression of the blend. The approach reflects the traditional handling of southern French red blends, adapted for dealcoholization.

After distillation, their original aromas are reintegrated, ensuring the liberated wine reflects the full character of its terroir.
