GIFT MESSAGE: "Because we are sparkling Oddbirds loving life to the fullest!"

Crisp, Refined & Effortlessly Modern

This liberated sparkling wine comes from the sun-soaked vineyards of Languedoc-Roussillon, crafted from a refined blend of Chardonnay and Colombard and aged for 12 months. The result is a dry, contemporary sparkling wine that’s both vibrant and elegantly composed.

The aroma opens with crisp Granny Smith apple, bright lemon peel, and zesty lime, all lifted by a delicate effervescence. Subtle hints of honey and almond add warmth and complexity, giving the wine a graceful depth that unfolds sip by sip. On the palate, the bubbles are fine and persistent, carrying the flavours toward an elegant, clean, and refreshing finish.

A modern sparkling wine with real finesse, fresh, layered, and perfectly balanced, offering the full pleasure of French craftsmanship without alcohol.

Grapes

Chardonnay & Colombard

Blanc de Blancs is crafted from Chardonnay and Colombard, two varieties chosen for their natural brightness and suitability for dealcoholized sparkling wine. Together, they provide acidity, lift, and structural resilience, qualities that help the wine retain clarity and character after alcohol removal.

  • Chardonnay contributes acidity, citrus profile, and structural clarity, elements that help maintain definition after the alcohol is removed.
  • Colombard adds orchard-fruit aromatics, floral notes, and mid-palate texture, supporting a more layered expression.

Region

Languedoc-Roussillon, France

Blanc de Blancs comes from Languedoc–Roussillon, a region marked by geological variety and one of the longest winemaking histories in France. Vineyards here sit on alternating layers of limestone, schist, and clay, each influencing how the grapes retain acidity, develop aroma, and express minerality. The southern climate brings long periods of sun, while the Tramontane wind, a defining feature of the region, cools the valleys and helps preserve freshness in the fruit. Wild garrigue plants such as thyme, rosemary, and lavender grow around the vineyards and subtly shape the aromatic profile of the grapes. Roman roads, monastic vineyards, and centuries of agricultural practice have left a visible imprint on the landscape. After years focused on quantity, the region is now driven by producers who prioritize precision and regional identity.

The Making of Blanc de Blancs

Blanc de Blancs is made by using methods that prioritise acidity, texture, and aromatic definition. The grapes are harvested early in the season to retain natural brightness. After fermentation, the base wine matures on fine lees for a full year, a process that slows oxidation and gradually develops the soft, creamy texture and subtle brioche notes associated with the style. Once it has reached its intended profile, the alcohol is removed through a low-temperature, aroma-preserving method designed to protect delicate aromatic compounds and structural elements. This allows the wine’s original balance, minerality, and fine mousse to remain largely unchanged. The result is a wine shaped by standard sparkling-wine practices, adapted to maintain integrity after dealcoholization.

Oddbird

Nature-Led Wines, Perfected Without Alcohol

Oddbird creates premium wines born from nature, crafted with patience, and perfected through innovation. Each cuvée begins in responsibly farmed vineyards across France, Italy, and Spain, where healthy soils, balanced vines, and precise harvest timing shape the wine long before it reaches the cellar. The winemaking is entirely natural, no pesticides, no additives, just the pure expression of grape, terroir, and time.

Through traditional European methods like natural fermentation, cold maceration, and careful aging in steel, concrete, or barrel, the wines develop real depth and structure. They are then gently dealcoholized using a patented low-temperature vacuum-distillation process that protects delicate aromas and flavor compounds. After distillation, their original aromas are reintegrated, ensuring the liberated wine reflects the full character of its terroir.

Each wine is the result of years of research, sensory science, and collaboration between winemakers, oenologists, and universities across Europe. Oddbird’s mission is clear, to offer wines with all the pleasure, nuance, and elegance of traditional winemaking, crafted for a modern world seeking clarity, balance, and choice.
