Current harvest has an exceptionally high polyphenol content, measured at 1,378 mg/kg, nearly 8× higher than a typical good extra virgin olive oil, 2x higher compared to our previous harvest.

What makes OlvLimits different from regular olive oil?

OlvLimits is built on one simple but radical idea: olive oil should be transparent, traceable and functional, not anonymous or generic.

Each harvest is early, intentional and independently lab-tested, not only to confirm extra virgin quality, but to understand the oil’s polyphenol content, freshness and nutritional depth. What you taste is not coincidence, it is chemistry, craftsmanship and care.


Why does the same olive oil taste different throughout the year?

Olive oil is a living product, not a static one. From the moment it is pressed, it continues to evolve. Over time, polyphenols slowly soften, bitterness rounds out, and aromas shift, even when the oil is stored perfectly.

With OlvLimits, this evolution is embraced rather than hidden. Early in the season, oils like Green Machine may feel bold, peppery and intense. Months later, they become more harmonious and integrated, without losing their functional value.

This natural progression is not a flaw, it is a sign of freshness and authenticity. Just like wine, olive oil reflects time, harvest and handling. Tasting that evolution is part of the ritual, and a reminder that real food is alive.


Why do you talk so much about polyphenols?

Polyphenols are the olive tree’s natural protective compounds. In olive oil, they are responsible for bitterness, pungency and that peppery sensation in the throat. More importantly, they are linked to antioxidant and anti-inflammatory activity.

Most extra virgin olive oils contain around 180 mg/kg of polyphenols. OlvLimits oils go far beyond that, with Green Queen offering elegant richness and Green Machine reaching exceptionally high levels. This is where olive oil shifts from flavour enhancer to daily functional food.


What is the difference between Green Queen, Green Machine and Yellow Mellow?

Think of them as three personalities, each designed for a different rhythm of life.

Green Queen is elegant and balanced. With a comfortably high polyphenol content, it is made for everyday use. Smooth, refined and versatile, it shines on vegetables, salads, eggs, smoothies and even coffee.

Green Machine is bold and unapologetically intense. With exceptionally high polyphenols, it is the choice for those seeking maximum functional depth. Ideal for raw cacao, bitter greens, soups and anti-inflammatory rituals where you want to feel the oil working.

Yellow Mellow is soft, sunny and approachable. Lower in bitterness, rounder in flavour and incredibly smooth, it is perfect for those new to high-quality olive oil, for children, or for dishes where subtlety matters, think fish, pasta, gentle vegetables and simple comfort food.

All three are extra virgin. The difference is not quality, but intention.


Why does Green Machine sometimes make my throat tingle?

That peppery tickle is caused by oleocanthal, a naturally occurring polyphenol found in fresh, high-quality olive oil. Oleocanthal has been studied for its anti-inflammatory activity and works on pathways similar to those targeted by ibuprofen, though olive oil is food, not medication.

If an olive oil is completely silent, it is often lower in polyphenols or no longer fresh.


Are OlvLimits olive oils organic?

Not yet officially certified. The farms behind OlvLimits follow organic farming practices and are actively working towards certification.

Beyond labels, OlvLimits independently tests every batch for pesticides and heavy metals, ensuring purity and safety. Transparency here is not a promise, it is a practice.


Can I cook with OlvLimits olive oils?

Yes, but with awareness.

OlvLimits oils are at their best raw or as a finishing touch, where their polyphenols and aromas remain intact. Drizzle them over warm vegetables, soups, grains or fish just before serving.

For high-heat frying, a more neutral oil may be preferable, while OlvLimits oils are reserved for flavour, nutrition and ritual.


How much olive oil should I consume daily?

There is no strict rule, but many studies reference 1–2 tablespoons per day as part of a balanced diet.

At Farmatuur, we prefer to speak about rituals rather than rules, a daily drizzle, a finishing touch, a moment of intention that quietly adds up.


Why add olive oil to lattes, smoothies or drinks?

It may sound unexpected, but it makes nutritional sense.

Olive oil improves the absorption of fat-soluble vitamins and plant compounds, softens bitterness and slows the absorption of stimulants like caffeine or theobromine. In raw cacao, green blends or even coffee, a small amount of olive oil creates a more grounded, nourishing experience.

It’s not a trick. It’s tradition, reimagined.
